Job Position Summary
Quality Catering Division (QCD) is the shore catering department of Fleet Management Ltd., that oversees the victualing (on board catering) matters of the merchant vessels (cargo ships) that the organization manages.
As a part of its endeavours, it also provides training to the salon ratings (chief cooks and general stewards) at it’s training centre located at Borivali – Mumbai.
The Training centre at QCD is headed by a Training Manager who reports to the G.M – QCD and is responsible to oversee its day-to-day affairs, devise training strategies and methodologies, design training modules and manuals and train the galley team on various aspects of their job, particularly on imparting various culinary skills.
Key Roles and Responsibilities
1. Day-to-day supervision of the training department
2. Designing various training courses and modules for both at site and online training models
3. Planning, preparation and implementation of training calendars
4. Imparting culinary skills on various cuisines to the galley teams
5. Imparting training on various other aspects such as food safety, hygiene, nutrition, sanitation, food handling, wastages control, inventory management, indenting, menu planning, etc.
6. Designing routine and festive/special occasion menus for the ships
7. Visiting ships for catering inspections, on board training programs, etc, when required.

Job Experience, Functional Knowledge and Qualifications
Qualification
- Candidate must possess a Diploma/Degree (min 3 years) in Hotel Management from a reputed Hospitality institute.
- An MBA / PGDBM / MSC preferably in the same field will be an added advantage.
Expertise
- The candidate must be proficient in Indian cuisine, with a sound knowledge of continental cuisine
- Knowledge of other international cuisines, especially some Asian cuisines such as the cuisine of Philippines, China, Korea will be an added advantage.
- The candidate must have a flair on the aspects of designing menus for various occasions, festivals, etc.
Experience
- Minimum 8-10 years in the kitchen department of which the last 3 years must be in a supervisory /senior chef (Sous Chef/CDP/DCDP level) role in either a star category hotel or on passenger /merchant ship / offshore industry/industrial catering sector.
- A working experience with multinational crew/teams (especially nationals from India, Philippines, Japan / Korea/Indonesia will be an added advantage.
- Past teaching experience (in hospitality institutions / other training institutions / shipping industry) is desired and /or will be an added advantage.
